Ingredients

  • 1 egg yolk
  • 1/3 cup sugar
  • 1 cup whole milk
  • 1/2 cup heavy whipping cream
  • 1/2 oz rum
  • 1/4 tsp fresh grated nutmeg
  • 1 egg white
  • 1 tsp sugar

Instructions

  1. In a bowl, whisk the egg yolk and gradually add 1/3 cup of sugar until dissolved.
  2. Combine the milk, cream, and nutmeg in a saucepan over high heat, bringing it just to a boil.
  3. Gradually temper the hot mixture into the egg and sugar mixture, then return everything to the pan and cook until it reaches 160 degrees F.
  4. Remove from heat, stir in the rum, and chill in the refrigerator.
  5. In a separate bowl, beat the egg whites until soft peaks form, gradually adding 1 tsp of sugar and beating until stiff peaks form.
  6. Once the yolk mixture is cooled, whisk in the egg whites. Chill and serve.
