Ingredients

  • 1 1/4 cups heavy cream
  • 2 large egg yolks
  • 2 tablespoons sugar
  • 1/2 cup whole milk
  • a pinch of salt
  • 2 tablespoons dark rum
  • a pinch of ground nutmeg, plus extra for serving

Instructions

  1. In a medium bowl, whisk together 3/4 cup of cream, egg yolks, and sugar until pale yellow and thoroughly combined.
  2. In a medium saucepan, bring the milk and salt to a simmer over medium-high heat, stirring occasionally.
  3. Slowly pour the hot milk mixture into the yolk mixture, whisking constantly to temper the eggs.
  4. Return the milk-yolk mixture to the saucepan and cook over medium-low heat, whisking constantly, until it reaches 160 degrees, for about 1 to 2 minutes.
  5. Pour the eggnog into a clean bowl and stir in the rum and ground nutmeg.
  6. Place the bowl of eggnog in a larger bowl filled with ice, and refrigerate until it reaches 40 degrees, stirring occasionally, for about 1 to 2 hours.
  7. Just before serving, whip the remaining 3/4 cup of cream until soft peaks form.
  8. Gently whisk the whipped cream into the chilled eggnog and serve, garnished with extra nutmeg. (Eggnog can be refrigerated for up to 24 hours.)
