Winter Wonderland Eggnog

Ingredients
- 1 1/4 cups heavy cream
- 2 large egg yolks
- 2 tablespoons sugar
- 1/2 cup whole milk
- a pinch of salt
- 2 tablespoons dark rum
- a pinch of ground nutmeg, plus extra for serving
Instructions
- In a medium bowl, whisk together 3/4 cup of cream, egg yolks, and sugar until pale yellow and thoroughly combined.
- In a medium saucepan, bring the milk and salt to a simmer over medium-high heat, stirring occasionally.
- Slowly pour the hot milk mixture into the yolk mixture, whisking constantly to temper the eggs.
- Return the milk-yolk mixture to the saucepan and cook over medium-low heat, whisking constantly, until it reaches 160 degrees, for about 1 to 2 minutes.
- Pour the eggnog into a clean bowl and stir in the rum and ground nutmeg.
- Place the bowl of eggnog in a larger bowl filled with ice, and refrigerate until it reaches 40 degrees, stirring occasionally, for about 1 to 2 hours.
- Just before serving, whip the remaining 3/4 cup of cream until soft peaks form.
- Gently whisk the whipped cream into the chilled eggnog and serve, garnished with extra nutmeg. (Eggnog can be refrigerated for up to 24 hours.)
