Ingredients

  • 1 large egg yolk
  • 2 tablespoons sugar
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • Seeds from 1/4 of a vanilla bean
  • Pinch of salt
  • 1/3 cup heavy cream
  • 1/2 cup whole milk
  • 1/3 cup whipping cream
  • 1 teaspoon cream cheese
  • 1 tablespoon powdered sugar

Instructions

  1. Allow the egg to sit at room temperature for 30 minutes.
  2. In a mixing bowl, whisk together the egg yolk, sugar, cinnamon, nutmeg, vanilla extract, vanilla bean seeds, and salt. Set aside.
  3. In a heavy saucepan, heat the heavy cream, milk, vanilla extract, and vanilla bean seeds over medium to medium-high heat, stirring constantly until it reaches a soft boil. Then, reduce the heat to low.
  4. Slowly pour a ladle of the hot milk mixture into the egg mixture while whisking continuously until well blended.
  5. Repeat the process with another ladle of the hot milk mixture, then pour the egg mixture into the saucepan with the remaining milk mixture.
  6. Cook the eggnog for 4 minutes, stirring constantly, then remove from heat and let it cool. For best results, refrigerate overnight.
  7. For the topping, blend the cream cheese and 2 tablespoons of heavy cream until smooth. Then add the remaining heavy cream and powdered sugar, and whisk on low speed until well blended. Scrape the sides of the mixing bowl and continue to mix on low speed. Finally, beat the whipping cream on high speed until stiff peaks form and hold their shape (approximately 1 minute).
  8. Fill a 6-8 oz mug or glass 3/4 full with eggnog, add whipped cream on top, level with the rim, and sprinkle cinnamon through a stencil to create a festive design on the whipped cream. Serve and enjoy!
