Ingredients

  • 2 ripe fuyu persimmons, tops removed and quartered
  • 1/2 cup water
  • 2 tablespoons brown sugar
  • 2 ounces rye or bourbon
  • 2 tablespoons persimmon puree
  • 4 dashes orange bitters
  • Seltzer water
  • Rosemary, for garnish (optional)
  • Fresh cranberries, for garnish (optional)

Instructions

  1. Place persimmons, water, and brown sugar in a blender or food processor.
  2. Blend until smooth, adjusting consistency with more water if necessary.
  3. Fill a short cocktail glass with ice.
  4. Add 2 tablespoons of persimmon puree and the rye or bourbon to the glass.
  5. Add the orange bitters and a splash of seltzer water.
  6. Gently stir to combine.
