Ingredients
- 2 slices cucumber (1/4-inch thick)
- 2 slices fresh ginger (1/4-inch thick)
- 6 mint leaves
- 2 oz Pimm's No. 1 liqueur
- 1 oz fresh Meyer lemon juice
- 2 dashes Angostura bitters
- 2 oz dry ginger beer
- Garnishes: cucumber spear or slice, mint sprig, rosemary sprig, strawberries, raspberries, blackberries, citrus wheels, candied ginger
Instructions
- In a cocktail shaker, muddle together the cucumber, ginger slices, and mint leaves to release their juices and flavors.
- Add the Pimm's, fresh Meyer lemon juice, and Angostura bitters to the shaker.
- Fill the shaker with ice, cover, and shake vigorously for at least 15 seconds until well-chilled.
- Strain the mixture into an ice-filled lowball or wine glass.
