Ingredients

  • 2 slices cucumber (1/4-inch thick)
  • 2 slices fresh ginger (1/4-inch thick)
  • 6 mint leaves
  • 2 oz Pimm's No. 1 liqueur
  • 1 oz fresh Meyer lemon juice
  • 2 dashes Angostura bitters
  • 2 oz dry ginger beer
  • Garnishes: cucumber spear or slice, mint sprig, rosemary sprig, strawberries, raspberries, blackberries, citrus wheels, candied ginger

Instructions

  1. In a cocktail shaker, muddle together the cucumber, ginger slices, and mint leaves to release their juices and flavors.
  2. Add the Pimm's, fresh Meyer lemon juice, and Angostura bitters to the shaker.
  3. Fill the shaker with ice, cover, and shake vigorously for at least 15 seconds until well-chilled.
  4. Strain the mixture into an ice-filled lowball or wine glass.
  5. Top the drink with the dry ginger beer.
  6. Garnish the cocktail with a cucumber spear or slice, mint sprig, rosemary sprig, and an array of berries, citrus wheels, and candied ginger as desired.
