Ingredients
- 2 tablespoons sugar
- 2 tablespoons water
- Zest of 1 large lime or 2 small limes
- 2 tablespoons freshly squeezed lime juice (from 1-2 limes)
- 1 tablespoon half-and-half
- 1.25 cups ice cubes
Instructions
- In a small saucepan, bring sugar and water to a simmer over medium heat, stirring occasionally until the sugar dissolves.
- Stir in the lime zest and remove from heat. Cover and let it steep for 1 hour, then strain the syrup through a fine-mesh sieve; discard the zest. (You'll have extra lime simple syrup; refrigerate for up to 1 week.)
- Add 2 tablespoons of the simple syrup, lime juice, half-and-half, and ice to a blender.
- Blend until the ice is crushed and the mixture is slushy.
- Pour into a glass and serve immediately.
