Ingredients

  • 2 tablespoons sugar
  • 2 tablespoons water
  • Zest of 1 large lime or 2 small limes
  • 2 tablespoons freshly squeezed lime juice (from 1-2 limes)
  • 1 tablespoon half-and-half
  • 1.25 cups ice cubes

Instructions

  1. In a small saucepan, bring sugar and water to a simmer over medium heat, stirring occasionally until the sugar dissolves.
  2. Stir in the lime zest and remove from heat. Cover and let it steep for 1 hour, then strain the syrup through a fine-mesh sieve; discard the zest. (You'll have extra lime simple syrup; refrigerate for up to 1 week.)
  3. Add 2 tablespoons of the simple syrup, lime juice, half-and-half, and ice to a blender.
  4. Blend until the ice is crushed and the mixture is slushy.
  5. Pour into a glass and serve immediately.
