Ingredients
- 2 oz Old Tom gin
- 0.50 oz freshly squeezed lemon juice
- 0.50 oz freshly squeezed lime juice
- 1.50 oz rich sugar syrup (2:1 ratio of sugar to water, 65.0degBrix)
- 0.25 oz orange blossom water
- 3 drops vanilla extract (optional)
- 0.75 oz pasteurized egg white or aquafaba
- 0.75 oz single cream or half-and-half
- Club soda
Instructions
- Shake the gin, lemon juice, lime juice, sugar syrup, orange blossom water, vanilla extract (if using), egg white, and cream with ice in a cocktail shaker.
- Strain the mixture back into the shaker.
- Dry shake (without ice) and slowly pour 2/3 of the mixture from a height into a chilled empty glass (no ice in the glass) while simultaneously pouring soda with your other hand.
- Let the cocktail settle for at least a minute before topping off with the remaining mixture from the shaker.
- For a perfect head, place the glass in a froster/fridge/freezer during the settling period.
- As the final contents are poured, the head should rise like a souffle.
