Ingredients
- 1/2 cup good quality full-fat coconut milk, chilled
- 2/3 cup good quality almond milk or other non-dairy milk
- 2 tbsp raw cashews, soaked and drained
- 2-3 Medjool dates, pitted and roughly chopped
- 1/2 tsp pure vanilla extract
- 1/2 tsp rum extract
- 1/8 tsp grated fresh nutmeg
- Pinch of ground cinnamon
- Pinch of kosher salt
- 1-2 tbsp brandy, rum or bourbon (optional)
Instructions
- Open the chilled can of coconut milk and scoop the solid coconut cream off the top into a blender. Discard the remaining liquid.
- Add almond milk, soaked cashews, dates, vanilla, rum extract, nutmeg, cinnamon, and salt to the blender.
- Blend on high until completely smooth, for about 3-5 minutes.
- Strain the eggnog through a fine-mesh sieve (optional).
- Serve immediately or add your choice of brandy, rum, or bourbon.
- To store, refrigerate in an airtight container for up to 1 week. Enjoy slightly warm.
