Ingredients

  • 1/2 cup good quality full-fat coconut milk, chilled
  • 2/3 cup good quality almond milk or other non-dairy milk
  • 2 tbsp raw cashews, soaked and drained
  • 2-3 Medjool dates, pitted and roughly chopped
  • 1/2 tsp pure vanilla extract
  • 1/2 tsp rum extract
  • 1/8 tsp grated fresh nutmeg
  • Pinch of ground cinnamon
  • Pinch of kosher salt
  • 1-2 tbsp brandy, rum or bourbon (optional)

Instructions

  1. Open the chilled can of coconut milk and scoop the solid coconut cream off the top into a blender. Discard the remaining liquid.
  2. Add almond milk, soaked cashews, dates, vanilla, rum extract, nutmeg, cinnamon, and salt to the blender.
  3. Blend on high until completely smooth, for about 3-5 minutes.
  4. Strain the eggnog through a fine-mesh sieve (optional).
  5. Serve immediately or add your choice of brandy, rum, or bourbon.
  6. To store, refrigerate in an airtight container for up to 1 week. Enjoy slightly warm.
