Vanilla Peach Sparkler

Vanilla Peach Sparkler
A delightful and refreshing cocktail with a perfect balance of sweet peach and aromatic vanilla flavors, topped off with sparkling wine.
Ingredients
- 1 ripe peach, peeled and cut into chunks
- 2 tablespoons granulated sugar
- 2 tablespoons water
- 1/2 teaspoon Nielsen Massey Vanilla Bean Paste, or 1/4 of a Vanilla Bean
- 4 oz sparkling wine/prosecco/champagne of your choice
Instructions
- In a small saucepan, combine the sugar and water and stir over medium-low heat until dissolved.
- Add the vanilla bean paste, or the vanilla bean with the seeds scraped out, and stir well. You can leave the pod in for extra flavor.
- Transfer the vanilla syrup to a small glass jar to cool.
- Use a food processor or immersion blender to process the peach chunks until smooth. Chill until ready to use.
- In a glass, add 2 tablespoons of peach pureƩ and 1 teaspoon of vanilla syrup.
- Top off with sparkling wine and serve right away.
