Ingredients

  • 1 ripe peach, peeled and cut into chunks
  • 2 tablespoons granulated sugar
  • 2 tablespoons water
  • 1/2 teaspoon Nielsen Massey Vanilla Bean Paste, or 1/4 of a Vanilla Bean
  • 4 oz sparkling wine/prosecco/champagne of your choice

Instructions

  1. In a small saucepan, combine the sugar and water and stir over medium-low heat until dissolved.
  2. Add the vanilla bean paste, or the vanilla bean with the seeds scraped out, and stir well. You can leave the pod in for extra flavor.
  3. Transfer the vanilla syrup to a small glass jar to cool.
  4. Use a food processor or immersion blender to process the peach chunks until smooth. Chill until ready to use.
  5. In a glass, add 2 tablespoons of peach pureƩ and 1 teaspoon of vanilla syrup.
  6. Top off with sparkling wine and serve right away.
