Ingredients

  • 1 organic whole pineapple
  • 2 liters mineral water
  • 7/8 cup brown sugar
  • 1 cinnamon stick
  • 2 cloves

Instructions

  1. Remove the skin from the pineapple and cut it into pieces.
  2. Place the pineapple skin, sugar, cinnamon, and cloves in a large jar.
  3. Cover the ingredients with 2 liters of water and seal the jar tightly.
  4. Gently shake the jar to mix the ingredients well and leave it at room temperature.
  5. Over the next 4 to 5 days, shake the jar 3 times a day to aid in the fermentation process.
  6. Once the drink is ready to be filtered, a good layer of foam will form on top.
  7. When the foam appears, filter the mixture into a sealable bottle and leave it at room temperature for 12 hours to allow the tepache to become sparkling.
