Ingredients
- 2 oz light rum
- 2 oz strawberries or strawberry puree
- 1 oz freshly squeezed lime juice
- 1 oz simple syrup or granulated sugar
- 1 oz coconut cream (Coco López)
- 2 oz pineapple juice
- 1 cup of ice (separated)
Instructions
- In a blender, combine 1/2 cup of ice, half of the light rum, strawberries, lime juice, and simple syrup or sugar. Blend until smooth to create the strawberry daiquiri mix.
- Set the strawberry daiquiri mix aside in a separate container.
- Clean the blender, then add another 1/2 cup of ice, the remaining light rum, coconut cream, and pineapple juice. Blend until smooth to make the piña colada mix.
- Fill a hurricane or tall cocktail glass halfway with the strawberry daiquiri mix.
- Gently pour the piña colada mix over the strawberry daiquiri, filling the rest of the glass.
- Garnish with a strawberry or pineapple slice if desired.
