Ingredients

  • 2 oz light rum
  • 2 oz strawberries or strawberry puree
  • 1 oz freshly squeezed lime juice
  • 1 oz simple syrup or granulated sugar
  • 1 oz coconut cream (Coco López)
  • 2 oz pineapple juice
  • 1 cup of ice (separated)

Instructions

  1. In a blender, combine 1/2 cup of ice, half of the light rum, strawberries, lime juice, and simple syrup or sugar. Blend until smooth to create the strawberry daiquiri mix.
  2. Set the strawberry daiquiri mix aside in a separate container.
  3. Clean the blender, then add another 1/2 cup of ice, the remaining light rum, coconut cream, and pineapple juice. Blend until smooth to make the piña colada mix.
  4. Fill a hurricane or tall cocktail glass halfway with the strawberry daiquiri mix.
  5. Gently pour the piña colada mix over the strawberry daiquiri, filling the rest of the glass.
  6. Garnish with a strawberry or pineapple slice if desired.
