Ingredients
- 4 cups whole milk
- 1 cup white granulated sugar
- 1 stick whole cinnamon (or 1 teaspoon ground)
- 16 whole cloves (about 1/2 teaspoon whole cloves or 1/4 teaspoon ground)
- 5 egg yolks
- 1/2 teaspoon vanilla extract
- 1 cup rum or aguardiente
Instructions
- In a large pot, combine the milk, sugar, cinnamon, and cloves, and heat over medium heat until it reaches a simmer. Stir frequently to prevent scorching.
- In a separate bowl, beat the egg yolks until smooth. To temper the egg yolks, slowly pour some of the simmering milk into the beaten egg yolks while continuously stirring.
- Transfer the tempered egg mixture back into the pot and cook over low heat for 8-10 minutes until slightly thickened. Then, stir in the vanilla.
- Strain the mixture through a fine mesh sieve to remove any whole or ground spices.
- Allow the rompope to cool, then add the rum or aguardiente and mix well. Serve chilled or warm.
