Ingredients

  • 4 cups whole milk
  • 1 cup white granulated sugar
  • 1 stick whole cinnamon (or 1 teaspoon ground)
  • 16 whole cloves (about 1/2 teaspoon whole cloves or 1/4 teaspoon ground)
  • 5 egg yolks
  • 1/2 teaspoon vanilla extract
  • 1 cup rum or aguardiente

Instructions

  1. In a large pot, combine the milk, sugar, cinnamon, and cloves, and heat over medium heat until it reaches a simmer. Stir frequently to prevent scorching.
  2. In a separate bowl, beat the egg yolks until smooth. To temper the egg yolks, slowly pour some of the simmering milk into the beaten egg yolks while continuously stirring.
  3. Transfer the tempered egg mixture back into the pot and cook over low heat for 8-10 minutes until slightly thickened. Then, stir in the vanilla.
  4. Strain the mixture through a fine mesh sieve to remove any whole or ground spices.
  5. Allow the rompope to cool, then add the rum or aguardiente and mix well. Serve chilled or warm.
