Ingredients
- 2 oz evaporated milk
- 1.40 oz sweetened condensed milk
- 1.40 oz coconut milk
- 1.50 oz sweetened cream of coconut
- 3-inch piece of cinnamon stick
- 1/2 vanilla bean (split lengthwise)
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 tsp vanilla extract
- 2.50 oz rum (white, spiced, coconut, or a combination)
- Toasted coconut (for garnish (optional))
Instructions
- In a saucepan, combine evaporated milk, condensed milk, coconut cream, and coconut milk over low heat, stirring to combine.
- Add the cinnamon sticks, vanilla bean, ground cinnamon, and nutmeg. Allow the mixture to simmer gently for 20-30 minutes until it thickens slightly, stirring occasionally.
- Remove from heat and let it cool for at least 30 minutes or until it reaches room temperature. Discard the cinnamon sticks and vanilla bean.
- Gradually whisk in the vanilla extract and rum. Pour the mixture into a pitcher, cover, and chill in the refrigerator for at least 2 hours until cold.
- Serve in small glasses, garnished with a sprinkle of cinnamon, nutmeg, and toasted coconut, or in larger glasses over ice.
