Ingredients

  • 1.50 cups crushed ice
  • 1.50 oz aged rum
  • 2 fresh pineapple chunks (1-inch each)
  • 1.50 oz pineapple juice
  • 3 oz cream of coconut
  • 5 coffee beans
  • 1 oz Pedro Ximénez sherry
  • mint sprig, for garnish (optional)
  • Fresh cherry, for garnish (optional)

Instructions

  1. Chill a tall glass.
  2. In a blender, combine the crushed ice, aged rum, pineapple chunks, pineapple juice, cream of coconut, and coffee beans; blend until smooth.
  3. Pour the mixture into the chilled glass.
  4. Carefully pour the sherry on top of the mixture.
  5. Garnish with a mint sprig and/or a fresh cherry, if desired.
