Ingredients

  • 1.50 cups crushed ice
  • 1.50 oz aged rum
  • 2 fresh pineapple chunks (1-inch)
  • 1.50 oz pineapple juice
  • 3 oz cream of coconut
  • 5 coffee beans
  • 1 oz Pedro Ximénez sherry
  • mint sprig, for garnish (optional)
  • Fresh cherry, for garnish (optional)

Instructions

  1. Chill a tall glass.
  2. In a blender, combine the crushed ice, aged rum, pineapple chunks, pineapple juice, cream of coconut, and coffee beans. Blend until smooth.
  3. Pour the mixture into the chilled glass.
  4. Slowly pour the Pedro Ximénez sherry on top.
  5. Garnish with a mint sprig and/or fresh cherry, if desired.
