Ingredients

  • 3 oz evaporated milk
  • 1.40 oz sweetened condensed milk
  • 1.40 oz coconut milk
  • 1.50 oz sweetened cream of coconut
  • 3 cinnamon sticks
  • 1/2 vanilla bean (split lengthwise)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp vanilla extract
  • 1/4 cup rum (white, spiced, coconut, or a combination)
  • Toasted coconut (for garnish (optional))

Instructions

  1. In a saucepan over low heat, combine evaporated milk, condensed milk, coconut cream, and coconut milk, whisking to blend.
  2. Add the cinnamon sticks, split vanilla bean, ground cinnamon, and nutmeg to the mixture, then let it barely simmer for 20-30 minutes, stirring occasionally until slightly thickened.
  3. Remove from heat and allow to cool for at least 30 minutes, then remove and discard the cinnamon sticks and vanilla bean.
  4. Slowly whisk in vanilla extract and rum, then pour the mixture into a pitcher, cover it, and chill in the fridge for at least 2 hours or until cold.
  5. Serve the coquito in small glasses or larger ones with ice, and garnish with a sprinkle of cinnamon, nutmeg, and toasted coconut.
