Ingredients

  • 4 limes, quartered
  • 3 cups water
  • 1/3 - 1/2 can condensed milk (carnation, or vegan coconut condensed milk)
  • 2 cups ice, plus more for serving
  • Small handful of fresh mint leaves
  • 1/2 red chilli, seeds removed
  • Serve with a shot of rum

Instructions

  1. Rinse the limes and cut them into quarters. Place the quarters in a blender along with the water.
  2. Pulse the blender 5-8 times until the limes are roughly broken up. Do not over-blend to avoid bitterness.
  3. Strain the lime and pith, and return the strained lime juice to the blender.
  4. Add 2 cups of ice, the chilli OR mint, and condensed milk (start with 1/3 can and adjust to taste).
  5. Blend the mixture until light and fluffy, ensuring the ice is fully combined into the liquid.
  6. Taste and adjust sweetness if needed, or add more fresh mint or chilli according to your preference.
  7. Pour into ice-filled glasses, serve with a shot of rum, and enjoy!
