Ingredients

  • 2.40 oz evaporated milk (1/4 cup)
  • 1.40 oz sweetened condensed milk (2 tbsp)
  • 1.40 oz coconut milk (2 tbsp)
  • 1.40 oz sweetened cream of coconut (2 tbsp)
  • 3 cinnamon sticks
  • 1/2 vanilla bean (split lengthwise)
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 tsp vanilla extract
  • 1 oz rum (white, spiced, or coconut)
  • Toasted coconut (for garnish (optional))

Instructions

  1. In a large saucepan over low heat, combine evaporated milk, condensed milk, coconut cream, and coconut milk, whisking to blend.
  2. Add cinnamon sticks, vanilla bean, ground cinnamon, and nutmeg, and simmer gently for 20-30 minutes until slightly thickened, stirring occasionally.
  3. Remove from heat, cool for at least 30 minutes, and then remove and discard the cinnamon sticks and vanilla bean.
  4. Slowly whisk in vanilla extract and rum. Pour the mixture into a pitcher, cover, and refrigerate for at least 2 hours until cold.
  5. Serve in small glasses garnished with a sprinkle of cinnamon, nutmeg, and toasted coconut, or in larger glasses with cubed ice.
