Ingredients

  • 1 oz Wray and Nephew Overproof Rum
  • 5.30 oz fresh strawberries, hulled
  • 1 oz lime juice, freshly squeezed
  • 0.50 oz simple syrup
  • ice
  • 1 oz Wray and Nephew Overproof Rum
  • 2 oz coconut cream
  • 0.50 oz simple syrup
  • 2 oz fresh pineapple juice
  • To garnish: a wedge of pineapple

Instructions

  1. In a blender, combine the overproof rum, fresh strawberries, lime juice, and simple syrup with a handful of ice. Blend until smooth.
  2. Pour the daiquiri mixture into a hurricane glass and place it in the freezer.
  3. Rinse and dry the blender jug.
  4. In the blender, combine the overproof rum, coconut cream, simple syrup, and fresh pineapple juice with another handful of ice. Blend until smooth.
  5. Retrieve the glass from the freezer and gently top it up with the piña colada mixture.
  6. Garnish the cocktail with a wedge of pineapple and enjoy.
