Ingredients

  • 1 tbsp sugar, for rimming champagne flute
  • Pineapple wedge
  • 1/6 cup pineapple juice
  • 1 1/2 tbsp coconut milk (not canned)
  • 1/6 bottle champagne, cava, or prosecco
  • Whipped topping, for serving

Instructions

  1. Sprinkle sugar onto a shallow dish. Run a pineapple wedge around the rim of a champagne flute and dip it in sugar. Set aside.
  2. In a glass, stir together pineapple juice and coconut milk until well combined.
  3. Pour the mixture into the prepared champagne flute.
  4. Top it off with champagne.
  5. Garnish the flute with whipped topping and a fresh pineapple wedge.
