Ingredients

  • 1 cup frozen pineapple pieces
  • 3 tbsp light coconut cream, chilled
  • 2 1/2 tbsp tequila
  • 1 tbsp liqueur
  • Zest and juice of 1/2 lime
  • 2 tsp granulated sugar
  • Shaved fresh coconut or flaked coconut, for garnish
  • Dried pineapple flowers, for garnish
  • 3-4 thin slices of pineapple
  • 1/2 tsp granulated sugar

Instructions

  1. Preheat oven to 100°F and line a large baking tray with parchment paper.
  2. Pat dry the pineapple slices, sprinkle with sugar, and place on the prepared tray.
  3. Bake for 1 hour, flip the slices, then bake for another hour until dried. Let them cool.
  4. In a blender, combine pineapple, coconut cream, tequila, liqueur, lime zest, lime juice, and sugar. Blend until smooth.
  5. Pour the mixture into a glass, sprinkle with lime zest and coconut, then garnish with dried pineapple flowers.
