Ingredients
- 1 cup frozen pineapple pieces
- 3 tbsp light coconut cream, chilled
- 2 1/2 tbsp tequila
- 1 tbsp liqueur
- Zest and juice of 1/2 lime
- 2 tsp granulated sugar
- Shaved fresh coconut or flaked coconut, for garnish
- Dried pineapple flowers, for garnish
- 3-4 thin slices of pineapple
- 1/2 tsp granulated sugar
Instructions
- Preheat oven to 100°F and line a large baking tray with parchment paper.
- Pat dry the pineapple slices, sprinkle with sugar, and place on the prepared tray.
- Bake for 1 hour, flip the slices, then bake for another hour until dried. Let them cool.
- In a blender, combine pineapple, coconut cream, tequila, liqueur, lime zest, lime juice, and sugar. Blend until smooth.
- Pour the mixture into a glass, sprinkle with lime zest and coconut, then garnish with dried pineapple flowers.
