Ingredients
- 1 cup frozen pineapple chunks
- 1/2 cup light coconut cream, chilled
- 2 1/2 fl oz tequila
- 2 tbsp triple sec or liqueur
- Zest and juice of 1 lime
- 2 tsp granulated sugar
- Shaved fresh coconut or flaked coconut, for garnish
Instructions
- Preheat the oven to 200°F. Line a baking tray with parchment paper.
- Place the pineapple slices on the tray and sprinkle with sugar. Bake for 1 hour, then turn the slices and bake for another hour until dry. Let them cool completely.
- In a blender, combine the frozen pineapple, coconut cream, tequila, triple sec, lime zest, and sugar. Blend until smooth.
- Pour the mixture into a glass and garnish with lime zest and coconut flakes. Add the dried pineapple flowers for a tropical touch.
