Ingredients

  • 1 cup frozen pineapple chunks
  • 1/2 cup light coconut cream, chilled
  • 2 1/2 fl oz tequila
  • 2 tbsp triple sec or liqueur
  • Zest and juice of 1 lime
  • 2 tsp granulated sugar
  • Shaved fresh coconut or flaked coconut, for garnish

Instructions

  1. Preheat the oven to 200°F. Line a baking tray with parchment paper.
  2. Place the pineapple slices on the tray and sprinkle with sugar. Bake for 1 hour, then turn the slices and bake for another hour until dry. Let them cool completely.
  3. In a blender, combine the frozen pineapple, coconut cream, tequila, triple sec, lime zest, and sugar. Blend until smooth.
  4. Pour the mixture into a glass and garnish with lime zest and coconut flakes. Add the dried pineapple flowers for a tropical touch.
