Trinidad Swizzle

Ingredients
- 8-10 mint leaves
- 3/4 oz simple syrup
- 2 oz demerara rum
- 1 oz lime juice, freshly squeezed
- 4 dashes Angostura bitters, divided
- Garnish: mint sprig
Instructions
- Place the mint leaves and simple syrup into a Collins glass and gently crush the mint.
- Add the rum, lime juice, and 2 dashes of bitters to the glass.
- Fill the glass almost to the top with crushed or pebble ice.
- Swizzle the mixture with a swizzle stick or bar spoon until the outside of the glass becomes frosty.
- Fill the glass with more crushed or pebble ice, mounding it slightly above the top.
- Top the cocktail with 2 dashes of bitters.
- Garnish with a sprig of mint.
