Ingredients

  • 1 oz. white rum
  • 1 oz. white wine
  • 1/2 oz. simple syrup
  • 1/2 oz. lemon juice
  • 1 oz. fresh orange juice
  • 2 oz. Champagne or sparkling wine
  • Twist of orange peel, for garnish

Instructions

  1. In a cocktail shaker filled with ice, combine egg white, rum, white wine, simple syrup, lemon juice, and fresh orange juice.
  2. Shake vigorously until the mixture is well mixed and frothy.
  3. Fill a large coupe glass with crushed ice to form a mound.
  4. Pour the mixed drink around the ice mound in the glass.
  5. Top off with Champagne or sparkling wine.
