Summer Sunset Slushie
A refreshing stone fruit slushie cocktail with charred nectarines, fresh mint, and rum, perfect for warm summer nights.
Ingredients
- 1 yellow nectarine (substitute peach), halved, stone removed
- 4-5 mint leaves
- 2 tbsp caster sugar
- 1/4 tsp citric acid
- 2 oz rum
- 1/2 oz orgeat syrup
- Ice cubes
Instructions
- Heat a grill pan over high heat and grill the nectarine halves for about 1 minute on each side until lightly charred. Set aside to cool.
- Blanch half of the mint leaves in boiling water for 10 seconds, then immediately refresh them under cold water.
- In a blender, combine the caster sugar and citric acid with 1 cup of hot water. Blend until the sugar and citric acid dissolve.
- Add the grilled nectarines and blanched mint to the blender and blend until smooth. Pour the mixture into ice cube trays and freeze overnight.
- In a blender, combine half of the rum, half of the orgeat syrup, and half of the frozen nectarine ice cubes. Blend until smooth, then pour into a glass. Repeat the same process for the remaining rum, orgeat syrup, and fruit ice cubes.
- Garnish with mint leaves and serve immediately.
