Ingredients

  • 2 large egg yolks
  • 2 tbsp sugar
  • 1 cup whole milk
  • Pinch of coarse salt
  • 4 oz stout beer
  • 1/4 cup heavy cream
  • 2 tbsp dark rum
  • Freshly whipped cream, for serving
  • Chocolate shavings, for serving

Instructions

  1. Whisk egg yolks and sugar in a bowl until pale and thick.
  2. Heat the milk and salt in a saucepan until it reaches a bare simmer.
  3. Slowly pour the hot milk mixture into the yolk mixture, whisking constantly.
  4. Return the mixture to the saucepan and cook over medium heat until thick enough to coat the back of a spoon.
  5. Strain the mixture into a large bowl and let it cool before adding the beer, cream, and rum. Refrigerate overnight.
  6. Whisk sugar and egg whites in a heatproof mixer bowl until warm and smooth.
  7. Beat the egg whites until stiff peaks form, then fold into the eggnog mixture.
  8. Pour into glasses, top with whipped cream, and sprinkle with chocolate shavings.
