Ingredients
- 2 large egg yolks
- 2 tbsp sugar
- 1 cup whole milk
- Pinch of coarse salt
- 4 oz stout beer
- 1/4 cup heavy cream
- 2 tbsp dark rum
- Freshly whipped cream, for serving
- Chocolate shavings, for serving
Instructions
- Whisk egg yolks and sugar in a bowl until pale and thick.
- Heat the milk and salt in a saucepan until it reaches a bare simmer.
- Slowly pour the hot milk mixture into the yolk mixture, whisking constantly.
- Return the mixture to the saucepan and cook over medium heat until thick enough to coat the back of a spoon.
- Strain the mixture into a large bowl and let it cool before adding the beer, cream, and rum. Refrigerate overnight.
- Whisk sugar and egg whites in a heatproof mixer bowl until warm and smooth.
- Beat the egg whites until stiff peaks form, then fold into the eggnog mixture.
- Pour into glasses, top with whipped cream, and sprinkle with chocolate shavings.
