Stone Fruit Minty Rum Slushie
A refreshing and fruity slushie cocktail with grilled nectarines, mint, rum, and orgeat syrup, perfect for warm summer nights.
Ingredients
- 1 yellow nectarine, halved, stone removed
- 6-8 mint leaves
- 2 tablespoons caster sugar
- 1/4 teaspoon citric acid
- 1.50 oz rum
- 0.30 oz orgeat syrup
Instructions
- Heat a grill pan over high heat.
- Grill the nectarine halves for 1 minute each side until lightly charred, then set aside to cool.
- Blanch half of the mint leaves in boiling water for 10 seconds, then refresh under cold water.
- In a blender, combine sugar and citric acid with 1 cup hot water and blend until dissolved.
- Add the grilled nectarine and blanched mint, and blend until smooth.
- Pour the mixture into an ice cube tray and freeze overnight.
- In a blender, combine half of the rum, half of the orgeat syrup, and half of the frozen nectarine cubes, and blend until smooth.
- Pour the slushie into a glass and repeat the blending process with the remaining ingredients.
- Garnish with mint sprigs and serve immediately.
