Spring Pea Zing
Spring Pea Zing is a vibrant and invigorating cocktail that beautifully encapsulates the fresh flavors of spring. The combination of London Dry Gin, sweet peas, mint, arugula, and black pepper creates a unique and delightful drinking experience.
Ingredients
- For the Minty Pea Syrup:
- 1 cup water
- 2 mint tea bags
- 1 cup sugar
- 2 cups chopped sugar snap peas
- 1/2 cup packed fresh arugula
- For Each Cocktail:
- 1 1/2 ounces London Dry Gin
- 1 ounce Minty Pea Syrup
- 3/4 ounce fresh lemon juice
- Pinch kosher salt
- Freshly cracked black pepper, for garnish
Instructions
- Start by preparing the Minty Pea Syrup. Bring water to a boil in a small saucepan and add mint tea bags. Remove from heat and steep for 4 minutes. Then, remove the tea bags and stir in the sugar until dissolved. Let it cool.
- To make the syrup, blend 1 1/2 cups of the cooled mint syrup, sugar snap peas, and arugula until smooth. Strain the mixture through a fine-mesh strainer and refrigerate until ready to use.
- For each cocktail, combine gin, Minty Pea Syrup, lemon juice, and a pinch of salt in a cocktail shaker filled with ice. Shake well until chilled.
- Strain the cocktail into a glass and garnish with freshly cracked black pepper.
