Ingredients

  • 1 cup sugar
  • 2 chamomile tea bags
  • 2 oz barrel-aged Old Tom Gin
  • 1 large egg
  • 0.75 oz chamomile syrup
  • 1-2 dashes Bolivar or Angostura bitters
  • Chamomile flowers, for garnish (optional)

Instructions

  1. Create chamomile syrup: In a small saucepan, combine sugar and 1 cup of water. Bring to a boil, stirring until the sugar dissolves. Remove from heat and add the tea bags. Let it steep for 4 to 6 minutes, then discard the tea bags and let the syrup cool.
  2. In a cocktail shaker, combine the gin, egg, and 3/4 ounce of chamomile syrup. Add ice, then cover and shake vigorously for 1 to 2 minutes until thoroughly mixed and very foamy.
  3. Strain the mixture into a coup glass and garnish with bitters and chamomile flowers if desired. Serve immediately.
