Ingredients

  • Ice cubes
  • 3/4 oz. lime juice
  • 3/4 oz. Chile Grenadine or purchased grenadine syrup
  • 1 1/2 oz. silver tequila (optional)
  • 4 - 6 oz. ginger beer, chilled
  • Luxardo cherry
  • 1 cup pomegranate juice
  • 1 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 pasilla or guajillo chile, seeded and crushed

Instructions

  1. Fill a cocktail shaker with ice and add lime juice, Chile Grenadine, and tequila (if using).
  2. Cover the shaker and shake vigorously until the mixture is very cold.
  3. Strain the mixture into an ice-filled Collins glass.
  4. Top with 4 oz. of chilled ginger beer, or 6 oz. if omitting tequila.
  5. Garnish with a Luxardo cherry.
  6. For the Chile Grenadine, in a small saucepan, combine all the ingredients and bring to a boil, stirring to dissolve the sugar.
  7. Cover and let the mixture steep for 30 minutes.
  8. Strain the syrup through a fine-mesh strainer and chill before using. Makes 1 3/4 cups.
