Ingredients

  • 2 oz. of honey
  • 2 oz. of water
  • 1 red chilli, split in half lengthways
  • 1 1/3 oz. of gin
  • 1/2 oz. of ginger liqueur
  • 1/2 oz. of elderflower liqueur
  • 1/2 oz. of lime juice, freshly squeezed
  • Dried lemon peel, shaped into a spiral, to garnish

Instructions

  1. Start by making the chilli-infused honey syrup. Combine the water and honey in a jar or container, then add the split red chilli. Let it infuse in the fridge for 2 days.
  2. Fill a cocktail shaker halfway with ice. Pour 1/2 oz. of the chilli-infused honey syrup and the remaining cocktail ingredients over the ice. Seal the shaker.
  3. Shake vigorously for 15 seconds.
  4. Use a Hawthorne strainer to hold back the ice and pour the contents of the shaker into a chilled, short glass filled with ice.
  5. Finish by garnishing with a dried lemon peel spiral and serve with short straws.
