Ingredients

  • 2 tablespoons long grain white rice
  • 1.25 cups water
  • 1 cinnamon stick
  • 1.25 oz pumpkin puree
  • 2 tablespoons coconut cream (shake before using)
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons brown sugar
  • 1/4 teaspoon vanilla extract
  • 1 oz rum

Instructions

  1. In a blender, combine the long grain white rice and 1.25 cups water. Blend until the rice is finely ground.
  2. Add the cinnamon stick and another 3/4 cup of water to the blender. Cover and refrigerate for 24 hours.
  3. Remove the cinnamon stick the next day and strain the rice through a cheesecloth into a large pitcher, squeezing tightly to extract all the milk.
  4. In a saucepan over low heat, melt together the pumpkin puree, coconut cream, brown sugar, pumpkin pie spice, and vanilla extract, stirring constantly until smooth and slightly warm.
  5. Add the pumpkin sauce to the rice milk and stir well. Strain through a cheesecloth for a finer consistency if desired.
  6. Stir the mixture occasionally, then add the rum.
  7. Garnish with a cinnamon stick for stirring and added flavor. Cheers!
