Ingredients

  • 1 large egg, separated
  • 2 tbsp dark rum
  • 2 tbsp bourbon or rye whiskey
  • 2 tbsp Cognac
  • 2 tbsp heavy cream
  • 1 1/2 tbsp dark maple syrup
  • 1/4 whole nutmeg seed

Instructions

  1. In a medium bowl, beat the egg white until stiff peaks form and set aside.
  2. In a large bowl, whisk together the egg yolk, rum, whiskey, Cognac, cream, and maple syrup until fully mixed.
  3. Grate the nutmeg into the yolk mixture and gently fold in the beaten egg whites in 3 batches, mixing well after each addition until fully combined.
  4. Transfer the mixture to a sealable container and refrigerate for at least 3 hours.
  5. Before serving, stir the mixture thoroughly to recombine, then ladle into small cups and garnish with additional grated nutmeg.
