Ingredients

  • 1/2 cup strong brewed coffee
  • 4/5 cup sugar
  • 2/5 cup white rum
  • 1/5 vanilla bean

Instructions

  1. Heat the coffee until hot.
  2. Mix the sugar into the hot coffee and set it aside to cool.
  3. Prepare a sous vide water bath at 135°F.
  4. Slice the vanilla bean and place a section in a jar.
  5. Once the coffee has cooled, add the rum and mix well.
  6. Divide the coffee, sugar, rum mixture between the jars, leaving 1 inch of headspace in each.
  7. Loosely seal the jars and place them in the sous vide bath for 3 hours at 135°F.
  8. Remove the jars and cool to room temperature before straining out the vanilla bean.
