Ingredients

  • 2 oz Pisco Brandy
  • 1 oz Fresh Lime Juice
  • 3/4 oz Simple Syrup
  • 3/4 oz Egg Whites (approximately 1 egg white)
  • 5 dashes Angostura Bitters (for garnish)

Instructions

  1. Combine Pisco brandy, fresh lime juice, simple syrup, and egg whites in a cocktail shaker and shake vigorously without ice.
  2. Add ice to the shaker and shake the ingredients for 10-15 seconds.
  3. Double strain the mixture into a pre-chilled coupe glass using a Hawthorne cocktail strainer and a fine strainer.
  4. Garnish the cocktail by dropping a few drops of Angostura bitters into the egg white foam and gently dragging a toothpick through the drops.
