Smoky Tomato Mezcal Sipper
A smoky and refreshing mezcal-based cocktail with grilled tomatoes, lime juice, and a hint of spice.
Ingredients
- 0.50 dried guajillo chili, cut open, stem and seeds removed
- 2 oz mezcal
- 0.25 lb ripe tomatoes, any variety
- 0.25 tbsp neutral oil, such as canola
- 0.75 oz fresh lime juice (from 1 to 1.5 limes)
- 0.50 tsp ground coriander seed
- 0.50 to 0.75 tsp Worcestershire sauce
- Garnish: lime wedge
Instructions
- Heat the grill to medium-high heat.
- Toast the guajillo chili using tongs until pliable and fragrant, about 2 minutes; do not char or burn the chilies.
- Cut the chili into small pieces and combine with mezcal in a pitcher, ensuring the chilies are submerged, then let it sit for 30 minutes.
- Halve the tomatoes and brush them with oil, then grill them cut sides down until soft but not falling apart with lightly charred skins, about 5 minutes.
- Transfer the grilled tomatoes to a cutting board, remove and discard the skins, and roughly chop the tomatoes.
- Muddle the chilies in mezcal until the liquid is a pale brick red.
- Add the grilled tomatoes, lime juice, and ground coriander, and muddle until the tomatoes are broken down.
- Strain the mixture through a fine mesh sieve and pour into an ice-filled glass.
- Season with Worcestershire sauce to taste, garnish with a lime wedge, and serve.
