Ingredients

  • 1 1/2 ounces Bombay Sapphire gin
  • 1 1/2 ounces Dolin dry vermouth
  • 1 1/2 ounces ice-cold water
  • 1/4 ounce maraschino liqueur
  • 1/4 ounce verjus blanc
  • 3 dashes orange bitters
  • 2 dashes St. George absinthe verte
  • 1 tablespoon cassia bark
  • 1 dried lemon peel
  • Garnish: dried rosebuds

Instructions

  1. In a mixing glass without ice, stir together the Bombay Sapphire gin, Dolin dry vermouth, ice-cold water, maraschino liqueur, verjus blanc, orange bitters, and St. George absinthe verte.
  2. Combine cassia bark chips and dried lemon peel in a small ramekin, then light them with a torch. Capture the smoke inside a white wine glass by inverting it over the ramekin for 20 to 30 seconds to season it.
  3. Pour the mixed drink into the prepared wine glass.
  4. Express the oils of lime and grapefruit peels over the glass, then discard the peels.
  5. Garnish with dried rosebuds.
