Ingredients

  • 4 large shrimp (peeled, deveined, tails removed)
  • 1/2 teaspoon salt
  • 1/4 cup chilled regular or low sodium V-8 juice
  • 1/4 English cucumber (peeled, cut into 1/2-inch pieces)
  • 1/2 teaspoon Sriracha sauce
  • 2 tablespoons ketchup
  • 1 teaspoon fresh lime juice
  • 2 tablespoons minced red onion
  • 1/4 yellow or orange sweet pepper (seeds and core removed, chopped into 1/2-inch pieces)
  • 1/4 ear corn on the cob (grilled, and corn cut from the cob)
  • 1 tablespoon fresh cilantro (minced)
  • 1/2 medium avocado (seeded, peeled, cut into 1/2-inch pieces)

Instructions

  1. Bring about 2 cups of water to a boil over high heat. Add the salt, and remove the pot from the heat once it's boiling.
  2. Add the shrimp, cover, and let them sit in the hot water for about 5 minutes, stirring once or twice.
  3. While the shrimp chill, combine the V-8, ketchup, Sriracha, and lime juice in a small mixing bowl. Stir well and set aside.
  4. Drain the shrimp and place them in a bowl of ice water to chill quickly.
  5. Drain the shrimp well and cut them into thirds, crosswise. Return the shrimp to the bowl.
  6. Add the cucumber, sweet pepper, onion, corn, and cilantro to the shrimp. Toss lightly.
  7. Pour the cocktail sauce over the shrimp and vegetables. Toss to combine. Add the avocado chunks and fold gently.
  8. Serve in a small bowl or martini glass with chips or crackers if desired.
