Ingredients

  • Zest of 1/2 lemon
  • Zest of 1/2 lime
  • Zest of 1/2 orange
  • 1 tablespoon granulated sugar
  • 1 tablespoon light brown sugar
  • 1/4 teaspoon orange bitters
  • 1 oz bourbon
  • 1 oz dark rum
  • 1 oz fresh lemon juice
  • 1 oz fresh lime juice
  • 1 oz fresh orange juice
  • 1/2 cup whole milk

Instructions

  1. In a bowl, muddle the citrus zest, granulated sugar, and brown sugar until fragrant.
  2. Add the port and bitters, then let it sit for 15 minutes.
  3. Stir in the bourbon, rum, lemon juice, lime juice, orange juice, and 1/4 cup water.
  4. Bring the milk to a bare simmer in a saucepan, then immediately pour it into the cognac mixture (the milk will curdle right away).
  5. Cover and chill the mixture for at least 1 hour and up to 24 hours.
  6. Strain the mixture through a fine-mesh sieve lined with cheesecloth into a bowl, cover, and chill until cold.
  7. Carefully ladle the clarified punch into a pitcher, leaving any remaining curds behind. Chill until ready to serve.
