Ingredients

  • 1 sugar cube
  • 3 dashes Peychaud's Bitters
  • 2 ounces rye whiskey
  • 1/4 ounce absinthe or anise liqueur (for rinsing)
  • Garnish: lemon twist

Instructions

  1. Chill an old-fashioned glass by filling it with ice and set it aside.
  2. In a mixing glass, muddle the sugar cube and bitters to crush the sugar.
  3. Add the rye whiskey to the mixing glass and stir well.
  4. Discard the ice from the chilled glass and rinse it with the absinthe by swirling a small amount in the glass, then discarding it.
  5. Pour the whiskey mixture into the absinthe-rinsed glass.
  6. Gently squeeze the lemon twist over the drink to release its essence. You can discard the twist or use it as a garnish by placing it on the rim.
