Ingredients

  • Ice
  • 1.70 oz reposado tequila (Herradura Reposado)
  • 2 oz pineapple juice
  • 0.50 oz lime juice
  • 3 drops Peychaud's bitters
  • 1/2 pack fresh sage
  • 2 cups white caster sugar (for sage syrup)
  • 1 fresh sage leaf for garnish

Instructions

  1. Prepare the sage syrup by infusing 500ml boiling water with a bunch of sage leaves for 5 minutes. Remove the sage, then stir in the sugar until it dissolves. Let the syrup cool completely.
  2. In a cocktail shaker, combine 0.5 oz of the sage syrup, a handful of ice, reposado tequila, pineapple juice, lime juice, and Peychaud's bitters.
  3. Shake the ingredients together and strain the mixture into a sherry glass.
  4. Garnish the cocktail with a sage leaf.
