Ingredients
- Ice
- 1.70 oz reposado tequila (Herradura Reposado)
- 2 oz pineapple juice
- 0.50 oz lime juice
- 3 drops Peychaud's bitters
- 1/2 pack fresh sage
- 2 cups white caster sugar (for sage syrup)
- 1 fresh sage leaf for garnish
Instructions
- Prepare the sage syrup by infusing 500ml boiling water with a bunch of sage leaves for 5 minutes. Remove the sage, then stir in the sugar until it dissolves. Let the syrup cool completely.
- In a cocktail shaker, combine 0.5 oz of the sage syrup, a handful of ice, reposado tequila, pineapple juice, lime juice, and Peychaud's bitters.
- Shake the ingredients together and strain the mixture into a sherry glass.
- Garnish the cocktail with a sage leaf.
