Ingredients

  • 1 sugar cube or 1/2 teaspoon sugar
  • 3 drops Peychaud's Bitters
  • 2 ounces rye whisky
  • 1 dash absinthe
  • Garnish: 2-inch piece lemon peel

Instructions

  1. Fill an old-fashioned glass with ice and let stand for about 5 minutes until very cold.
  2. In a second old-fashioned glass, place sugar and add just enough water to moisten; muddle with a bar spoon.
  3. Add bitters and whisky with several pieces of ice; stir for about 1 minute until very cold.
  4. Empty the ice-filled glass and add absinthe; swirl to coat the sides and pour out any excess.
  5. Strain the whisky mixture into the absinthe-coated glass.
  6. Garnish with a lemon peel.
