Rum Ginger Cucumber Fizz
A refreshing and revitalizing cocktail made with white rum, homemade ginger lime syrup, fresh cucumber juice, and a splash of club soda.
Ingredients
- 2 oz. white rum
- 1 oz. homemade ginger lime syrup (made from sugar, lime juice, and grated ginger)
- 2 oz. fresh cucumber juice (made from 2 cucumbers)
- Club soda
- Crushed ice
Instructions
- In a small saucepan, combine sugar, lime juice, and grated ginger. Bring to a boil, then reduce heat and simmer for a few minutes. Remove from heat, let it cool, and then strain the syrup. Refrigerate the syrup.
- Peel and dice two cucumbers, then blend them in a blender until smooth. Strain the puree through a fine mesh strainer into a bowl, discard the solids, and refrigerate the juice.
- In a cocktail shaker with ice, combine the rum, ginger lime syrup, and cucumber juice. Shake well.
- Pour the mixture into a glass filled with crushed ice.
- Top off with club soda as desired.
