Ingredients

  • 1/2 cup water
  • 1/4 cup raw honey
  • 1 sprig rosemary
  • 2 oz vodka
  • 4-6 oz soda water or lemon-flavored soda water
  • 2 lemon wedges (one to squeeze and one for garnish)
  • 1 sprig rosemary (for garnish)
  • ice

Instructions

  1. In a small pan, combine water and raw honey, bringing to a boil while stirring to mix.
  2. Once boiling, reduce heat to a low boil and add rosemary sprigs. Simmer for 10-15 minutes.
  3. Remove from heat and let the rosemary steep for 30 minutes, then strain the simple syrup into a jar and refrigerate.
  4. When ready to make the cocktail, fill a glass with ice and add vodka and 1-2 tbsp of the infused simple syrup.
  5. Adjust the amount of syrup to taste, then top with soda water, squeeze in a lemon wedge, and stir.
  6. Garnish with a sprig of rosemary and a lemon wedge. Enjoy!
