Ingredients

  • 1/4 cup forced rhubarb, sliced
  • 2 tbsp caster sugar
  • 1/2 cup dry gin
  • 1/2 vanilla bean, split in half
  • 4-5 slices fresh ginger
  • 2 star anise
  • zest of 1 blood orange

Instructions

  1. Place the sliced rhubarb and caster sugar in a large jar and stir well to coat the rhubarb with sugar.
  2. Add the vanilla, ginger, star anise, and blood orange zest to the jar.
  3. Cover the jar and let it sit at room temperature for 12 hours, shaking it occasionally, allowing the sugar to draw out the pink juice from the rhubarb.
  4. Pour the gin into the jar and stir well to combine with the rhubarb.
  5. Cover the jar and set it aside for at least 1 week, shaking it daily to extract as much flavor from the rhubarb as possible.
  6. Strain the gin through a fine mesh sieve into a jug and decant it into clean bottles.
  7. Serve the infused gin over ice in tall glasses, topped up with soda or tonic water and a slice of lime or blood orange.
