Ingredients
- 1/4 cup forced rhubarb, sliced
- 2 tbsp caster sugar
- 1/2 cup dry gin
- 1/2 vanilla bean, split in half
- 4-5 slices fresh ginger
- 2 star anise
- zest of 1 blood orange
Instructions
- Place the sliced rhubarb and caster sugar in a large jar and stir well to coat the rhubarb with sugar.
- Add the vanilla, ginger, star anise, and blood orange zest to the jar.
- Cover the jar and let it sit at room temperature for 12 hours, shaking it occasionally, allowing the sugar to draw out the pink juice from the rhubarb.
- Pour the gin into the jar and stir well to combine with the rhubarb.
- Cover the jar and set it aside for at least 1 week, shaking it daily to extract as much flavor from the rhubarb as possible.
- Strain the gin through a fine mesh sieve into a jug and decant it into clean bottles.
- Serve the infused gin over ice in tall glasses, topped up with soda or tonic water and a slice of lime or blood orange.
