Ingredients

  • 2/3 cup caster sugar
  • 1 1/4 cups water
  • 4 Earl Grey tea bags
  • 1 2/3 cups gin
  • 2 1/2 tbsp elderflower cordial
  • 4 cups soda water
  • Juice of 3 lemons
  • 1-2 tsp Angostura bitters
  • 1 lemon, cut into wedges
  • 4 nectarines, cored and sliced
  • Edible flowers (to serve)

Instructions

  1. In a saucepan, combine the caster sugar and 1 1/4 cups of water. Stir over heat until the sugar dissolves.
  2. Bring the mixture to a boil, then remove from heat. Add the Earl Grey tea bags and steep for 30 minutes. Squeeze the tea bags and discard them.
  3. Transfer the cooled syrup to a large bowl. Add the gin, elderflower cordial, soda water, lemon juice, and Angostura bitters to taste.
  4. Stir in the lemon wedges, sliced nectarines, and plenty of ice.
  5. Adjust the taste as needed and garnish with edible flowers before serving.
