Ingredients

  • 2 oz thawed frozen raspberries
  • 2 tbsp lemon juice, chilled
  • 1 tbsp cold water
  • 1 tbsp granulated sugar
  • 6 oz club soda, chilled
  • Fresh mint, ice cubes, lemon slices, and fresh raspberries for serving

Instructions

  1. In a small saucepan, heat the water and granulated sugar over medium-high heat, stirring occasionally, until the sugar has completely dissolved. Remove from heat and let it cool.
  2. Place thawed frozen raspberries in a blender or food processor and pulse until pureed.
  3. Use a wooden spoon to push the raspberry puree through a fine-mesh strainer into a bowl.
  4. Stir together the raspberry puree, chilled lemon juice, and cooled simple syrup in a large pitcher until well blended.
  5. Pour in the chilled club soda and stir to combine.
  6. Pour the raspberry lemonade into a glass and add fresh raspberries and ice cubes, if desired.
  7. Garnish with lemon slices and fresh mint.
