Ingredients

  • 2 cups raspberries (frozen or fresh)
  • 1 big handful of fresh thyme
  • 1 cup apple cider vinegar
  • 1 cup sugar
  • 1 1/2 oz gin
  • 1/2 oz raspberry liqueur
  • 1/2 oz lemon juice
  • 1 oz raspberry thyme shrub
  • 1/2 oz egg white
  • 3 - 4 oz club soda

Instructions

  1. In a medium pot, combine raspberries, thyme, sugar, and apple cider vinegar. Heat the mixture to a simmer for about 10 minutes without boiling. Let it cool completely.
  2. Strain the shrub and store it in an airtight container in the fridge. For best flavor, let the thyme and raspberries sit in the sugar and vinegar liquid for up to 2 or 3 days.
  3. In a cocktail shaker, combine gin, raspberry liqueur, lemon juice, raspberry thyme shrub, and egg white. Shake well.
  4. Pour the mixture into a short glass and top it with club soda.
  5. Serve and enjoy!
