Ingredients
- 1 cup raspberries
- 3/4 cup sugar
- 2 tablespoons freshly squeezed lemon juice
- 1 cup water
- 1/2 cup white wine
- 1 (12 oz) can sparkling or seltzer water
- Ice cubes
- Lemon slices (for garnish)
- Fresh raspberries (for garnish)
- 1 sprig rosemary (for garnish)
Instructions
- In a medium pot, combine raspberries, sugar, lemon juice, water, and a slice of lemon. Heat over medium-high heat.
- Reduce the heat when the mixture starts to boil and let it simmer for about 10 minutes or until the raspberries have broken down.
- Remove from heat and allow the mixture to cool for approximately 10 minutes.
- Strain the liquid to remove the raspberry solids.
- Add about 2 tablespoons of the raspberry simple syrup to a glass with ice.
- Pour in the white wine and sparkling or seltzer water.
- Garnish with fresh raspberries, a slice of lemon, and a sprig of rosemary. Serve immediately.
