Ingredients

  • 1 cup raspberries
  • 3/4 cup sugar
  • 2 tablespoons freshly squeezed lemon juice
  • 1 cup water
  • 1/2 cup white wine
  • 1 (12 oz) can sparkling or seltzer water
  • Ice cubes
  • Lemon slices (for garnish)
  • Fresh raspberries (for garnish)
  • 1 sprig rosemary (for garnish)

Instructions

  1. In a medium pot, combine raspberries, sugar, lemon juice, water, and a slice of lemon. Heat over medium-high heat.
  2. Reduce the heat when the mixture starts to boil and let it simmer for about 10 minutes or until the raspberries have broken down.
  3. Remove from heat and allow the mixture to cool for approximately 10 minutes.
  4. Strain the liquid to remove the raspberry solids.
  5. Add about 2 tablespoons of the raspberry simple syrup to a glass with ice.
  6. Pour in the white wine and sparkling or seltzer water.
  7. Garnish with fresh raspberries, a slice of lemon, and a sprig of rosemary. Serve immediately.
