Ingredients

  • 1/4 cup honey
  • 1/4 cup water
  • 1 tablespoon cane sugar
  • Zest of 1 lemon
  • 1 lemon wedge
  • 1/4 cup fresh raspberries
  • 2 oz. freshly squeezed lemon juice
  • 3-4 fresh mint leaves
  • 1 oz. honey simple syrup (recipe above)
  • 3-4 ice cubes
  • 0.50 oz. triple sec
  • 1.50 oz. Finlandia vodka
  • 1 slice of lemon for garnish

Instructions

  1. Prepare the honey simple syrup by dissolving honey in water in a saucepan and allowing it to cool.
  2. Combine the cane sugar and lemon zest in a small plate. Use the lemon wedge to wet the rim of a coupe glass and dip it in the sugar mixture, then place the glass in the freezer.
  3. In a large glass, muddle raspberries, lemon juice, mint leaves, and honey simple syrup until the raspberries are pureed.
  4. Fill a shaker with ice, pour in the triple sec and vodka, then strain the raspberry mixture into the shaker.
  5. Shake the mixture for about 40 seconds.
  6. Remove the coupe glass from the freezer and pour the cocktail into the glass. Garnish with a slice of lemon and serve.
